Hand-picked grapes. Berry selection, slow alcoholic co-fermentation of the two varieties with indigenous yeasts. Aging in French oak casks for 24 months, no filtration and minimal sulfites added before bottling.

At least 12 months maturation in the bottle.

A powerful purple red wine with aromas of wild red fruits, dark flowers from local mountains and a complex, sophisticated palate with chocolate aftertaste.

AROMAS: sour cherry, blackthorn berries, violets, wild thyme and chocolate

TASTE: powerful chalky tannins, complex palate with a very long aftertaste

Hand-picked grapes. Whole-bunch pressure in pneumatic press and then alcoholic fermentation in stainless steel tanks with wild yeasts. Ageing on the lees for 6 months, light filtration and minimal sulfites added before bottling.

A complex white wine with aromas of citrus fruits and an extremely concentrated palate.

AROMAS: white grapefruit, bergamot, lychee, lemon and basil leafs

Fresh grape marc undergoes multiple distillation in small copper batch pots. Afterwards, the heart of the spirit matures for 12 months in stainless steel to become rounder and mellower. No added sugar before bottling.

The result is a fine, aromatic spirit with prominent fine-tuned botanical aromas of mint, eucalyptus, violet flowers combined with aromas of black cherries. On the palate, it is smooth, round with flavours of black currants and fig jam. Long aromatic aftertaste.

 

A premium, small-batch tsipouro made by Ioanna Tsilili her father's honour Makis Tsililis, after a long experience in distillation.
